Sweet and Simple

I love to bake from scratch. The flavor of homemade goodies is unbeatable! But sometimes I just do not have the time or energy. So I find ways to use the boxed cake mixes and tweak them to make a fabulous dessert that can fool anyone into thinking it is homemade. My daughter, Kate and I made these for a recent get together with some new friends.
Chocolate Cupcakes with Raspberry Cream Filling and Whipped Chocolate Ganache

Simply make your favorite chocolate cake mix. We used Betty Crocker Devil's Food. When cool, use a melon scoop to make a hole in each cupcake.
Filling: Cool Whip and Frozen Raspberries
Just place a handful of frozen raspberries and a a few dollops of Cool Whip in a blender and mix thoroughly. Pipe filling into each cupcake.
Ganache
For an easy option use pre-made canned chocolate frosting and pipe onto cupcakes. Top with a fresh raspberry and serve.

These were a big hit with all ages. Easy and "almost" homemade. Enjoy!!
